I don't measure my twist angle (though I'm sure I should...) but I DO spin everything rather more tightly than any commercial yarn. If I'm going to spend that kind of time processing and prepping fiber, spinning it, and finishing it, I'm going to make it so that it holds up for more than one season (or year). I have hand spun socks, spun full worsted, that are 3 years old, worn at least once a week nearly year round (I work in a field where I have to wear full socks and shoes) and they are holding up beautifully. No, they're not fluffy but they're nowhere near wire consistency either. And they're comfortable for 12 hour shifts on my feet.
My main wheel is an antique Canadian Production Wheel made by Theodore Bordua. It's perfect for spinning the kind of yarn I use - traditional fine singles with a decent amount of twist in them, good for weaving and knitting, whether used as singles or plied.
Here's a post I did a while ago about wool and softness and spinning: http://thetinfoilhatsociety.com/2014/09/18/wool-has-to-be-soft/
